Is Beetroot Anti-Inflammatory?

Beetroot owes its deep crimson color to betalain pigments and carries one of the highest dietary nitrate loads of any vegetable. Both compounds have real anti-inflammatory credentials, but the human evidence is more nuanced than the wellness headlines suggest.

Beetroot (Beta vulgaris) has moved from a humble root vegetable to a fixture of the sports and longevity aisles, sold as juice shots, powders, and gummies. Much of that popularity rests on its nitrate content and its effect on blood pressure and exercise performance. But a growing body of research has also examined a separate question: can beetroot actually calm chronic inflammation, the low-grade immune activation that underlies so many age-related conditions?

The answer is a qualified yes. Beetroot contains a distinctive combination of bioactive compounds with demonstrated anti-inflammatory activity, and several human trials show measurable reductions in inflammatory markers. At the same time, the results vary by dose, by preparation, and by who is being studied, and the effect on C-reactive protein in particular has been inconsistent. Understanding both sides of that picture is what separates a realistic expectation from a marketing claim.

Betalains are the water-soluble red and yellow pigments that give beetroot its color. They are potent antioxidants that also inhibit inflammatory signaling pathways, and they are largely unique to beets and a handful of related plants.

What Makes Beetroot Potentially Anti-Inflammatory

Beetroot's anti-inflammatory reputation rests on two well-characterized groups of compounds that work through different mechanisms.

Betalains, the pigments doing the heavy lifting. The vivid red of beetroot comes from betalains, chiefly betanin. Beyond color, these pigments are strong antioxidants that neutralize reactive oxygen species and, in laboratory and animal studies, suppress key inflammatory pathways including nuclear factor-kappa B (NF-kB), the master switch that turns on many inflammatory genes. A comprehensive review in the journal Nutrients concluded that beetroot's constituents, most notably the betalain pigments, "display potent antioxidant, anti-inflammatory and chemo-preventive activity in vitro and in vivo" (Clifford et al., 2015).

Dietary nitrate and nitric oxide. Beetroot is one of the richest natural sources of inorganic nitrate. The body converts nitrate into nitric oxide, a signaling molecule that relaxes and widens blood vessels. Nitric oxide also has anti-inflammatory actions in the vascular lining, helping to reduce the adhesion of inflammatory white blood cells to vessel walls, an early step in the arterial damage that drives heart disease. This is the same pathway behind beetroot's well-documented blood-pressure benefits, and it links the vegetable to the inflammatory side of hypertension.

A supporting cast of nutrients. Beets also supply fiber, folate, potassium, manganese, vitamin C, and additional plant compounds such as flavonoids and polyphenols. A 2022 review of beetroot's bioactive profile noted that its phytochemical diversity gives it "the potential to be an antioxidant, antimicrobial, anticancerous, hypocholesterolemic, and anti-inflammatory agent" (Punia Bangar et al., 2022). Fiber matters here too, because it feeds the gut bacteria that help regulate systemic inflammation.

What the Human Research Actually Shows

Cell and animal studies almost always look favorable, so the more useful question is what happens in people. Here the evidence is encouraging but genuinely mixed.

Beetroot juice lowered inflammation in people with high blood pressure. In a randomized crossover study of 24 adults with hypertension, participants drank 250 milliliters of raw beetroot juice daily for two weeks. Compared with eating an equivalent amount of cooked beetroot, the raw juice produced significantly lower high-sensitivity CRP and TNF-alpha, along with better endothelial function measured as flow-mediated dilation (Asgary et al., 2016). Both forms of beetroot improved inflammation and blood pressure, but the raw juice did so more strongly.

In type 2 diabetes, some markers fell but CRP did not. A 12-week randomized controlled trial gave 52 people with type 2 diabetes concentrated beetroot juice twice daily. Compared with the control group, beetroot significantly reduced IL-6, TNF-alpha, and NF-kB, three central drivers of chronic inflammation, while high-sensitivity CRP and the oxidative-stress marker MDA did not change significantly between groups (Karimzadeh et al., 2022). Notably, those same inflammatory markers rose in the control group over the study, suggesting beetroot may have helped hold inflammation steady even where it did not sharply lower every measure.

It did not blunt exercise-induced inflammation after a marathon. A well-designed double-blind trial had 34 experienced runners consume beetroot juice or a placebo for three days after a marathon. Beetroot did not reduce the surge in inflammatory cytokines, muscle soreness, or markers of muscle damage compared with placebo (Clifford et al., 2016). The takeaway is that beetroot is not a magic recovery aid for acute, exercise-driven inflammation, which behaves very differently from the chronic, low-grade kind.

Read together, these trials suggest beetroot is most likely to move inflammatory markers in people who start with elevated inflammation or cardiometabolic risk, and least likely to matter in already-healthy, well-trained individuals facing a short-term inflammatory spike.

Does Beetroot Lower CRP?

C-reactive protein deserves its own answer because it is the marker most people can actually track. The honest summary is that beetroot's effect on CRP is inconsistent. One study in hypertensive adults found raw beetroot juice significantly lowered hs-CRP relative to cooked beetroot (Asgary et al., 2016), while the larger diabetes trial found no significant change in hs-CRP even as IL-6 and TNF-alpha dropped (Karimzadeh et al., 2022).

That divergence is not surprising. CRP is produced by the liver in response to IL-6 and tends to move more slowly and less dramatically than the upstream cytokines. A food can nudge the inflammatory signaling network without producing a large, reliable change in CRP over a few weeks. This is exactly why beetroot is better framed as part of an overall anti-inflammatory pattern, alongside polyphenol-rich foods and an anti-inflammatory diet, rather than as a targeted CRP-lowering intervention on its own.

Beetroot Juice, Cooked Beets, or Powder?

How you consume beetroot changes what you get from it.

Raw juice tends to preserve the most active compounds. In the hypertension study, raw beetroot juice outperformed cooked beetroot for inflammation, endothelial function, and cholesterol, likely because heat and prolonged cooking can degrade some betalains and reduce nitrate content (Asgary et al., 2016). If juice is your route, unsweetened is the goal, since added sugar works against the anti-inflammatory aim.

Whole cooked beets still deliver benefits, plus fiber. Roasting or steaming beets lowers some nitrate but keeps the fiber that juice largely removes, and fiber has its own inflammation-lowering role through the gut. Light steaming preserves more betalains than long boiling. For most people eating whole beets a few times a week is a sustainable, well-rounded choice.

Powders and concentrates are convenient but variable. Beetroot powder and concentrated shots can be a practical way to get a consistent nitrate dose, and the diabetes trial used a concentrate successfully. The catch is that betalain and nitrate content varies widely between products and is rarely listed, so quality is hard to judge from the label alone.

How to Use Beetroot for Anti-Inflammatory Benefit

Beetroot is a food, not a medication, so the practical goal is regular, moderate inclusion rather than megadoses.

  • Aim for consistency over intensity. The trials that showed benefit used daily intake over two to twelve weeks. An occasional beet salad is unlikely to move any marker; a regular habit is what the research modeled.
  • Combine forms. A glass of raw juice for the nitrate and betalains, plus whole roasted beets for fiber, covers both angles.
  • Pair it with the rest of the pattern. Beetroot works best inside a broader anti-inflammatory diet that is rich in vegetables, legumes, olive oil, and omega-3 sources, not as a single hero ingredient.
  • Keep the sugar out. Choose plain juice and unsweetened powders, since added sugar promotes the very inflammation you are trying to reduce.

Who Should Be Cautious

Beetroot is safe for most people, but a few groups should pay attention. Beets are high in oxalates, so anyone prone to calcium-oxalate kidney stones may want to moderate large or concentrated intakes. Because beetroot lowers blood pressure, people already on antihypertensive medication should be aware of the additive effect. And a harmless but startling quirk called beeturia, pink or red urine and stool, affects a subset of people after eating beets and is not a cause for concern. As always, a general wellness food is not a substitute for prescribed treatment.
